Fried Rice is one of those quick and easy weeknight dinner solutions that can save you from reaching for the take-out menu. Usually, you’ll need some leftover rice for best results or at least to plan ahead to cook up some rice and allow it to cool. If you’re not lucky enough to have previously cooked rice on hand for some homemade stir-fried rice, Chef Soraya can help you satisfy your craving without the wait. Plus, with Chef Soraya on hand, this dish will taste like it took a whole lot longer than it actually did.

Chef Soraya is in the kitchen cooking up this simple and delicious curry fried rice. We combined garlic, ginger, onion, snap peas, carrots, broccoli, soy sauce, @chosenfoods avocado oil, @vitalfarms eggs, and of course Kathmandu Curry Lentils and Rice Eat a Bowl to create a quick and easy weeknight meal that will taste like it took a lot more effort than it actaully did! You can make it with any stir fry veggies you have on hand and you can easily subsitute eggs for a tofu scramble to suit your diet.
For this recipe, we chose the Kathmandu Curry Bowl. This gave our fried rice a unique spiced curry flavor and the lentils give the dish a nutritional boost. Lentils are an excellent source of fiber, magnesium, and folate. Each bowl is full of flavor and spice that can carry over into your dish and create a delicious and unique experience. Other ingredients include avocado oil, diced yellow or white onion, minced garlic, grated ginger, julienned carrots, broccoli, snap peas, soy sauce, and vital farms eggs. You can easily substitute eggs for a tofu scramble or another plant-based protein to suit your diet. We chose these veggies based on traditional fried rice recipes, but you can easily make this with alternative veggies or whatever else you have on hand in the refrigerator.
To begin, heat up approximately a tablespoon or so of avocado oil or another cooking oil of your choice in a large skillet. Begin to sauté your garlic, ginger, and onion. Make sure you stir frequently so the garlic doesn’t get too dark. Once the onions begin to become transparent and slightly caramelized, you can add your other vegetables. We like our veggies a little andante so when the colors become a little more vibrant and the vegetables begin to soften, you’ll be ready to add your eat a bowl to the pan. We used two cups so that we would have enough stir fired rice to share. Part of the beauty of making stir fried rice with eat a bowl is that you can easily portion your meal. Make sure your Eat a Bowl is rehydrated when you add it to the pan and there isn’t a lot of liquid left to be absorbed. This will help you get the rice and veggies nice and crisp in the pan.
Once you’ve stirred in your Eat a Bowl, you can add any additional protein you chose. Eggs are a simple and traditional addition to stir fried rice. We chose Vital Farms Pasture Raised eggs for our meal. Crack a few eggs into the skillet with the rest of your stir fry, again make sure there isn’t too much liquid in the pan and stir the eggs throughout the mixture until they are fully cooked and incorporated into your meal. The serve, you can add soy sauce, sriracha, or any other condiments of your choice. Try sprinkling some fresh herbs over the top, chopped scallions, or toasted sesame seeds.
